The "Product and consumer safety" research line aims to evaluate the effect of different factors during the production process on the nutritional and sensory characteristics and maintenance of freshness in farmed species. Under this perspective, potential effects of commercial and experimental diets on these parameters are evaluated. Also, slaughtering conditions and ice storage protocols are improved in order to maintain or increase the freshness and perception by the consumer.
